eing able to start calving as better spring weather arrives, and still be able to achieve excellent calf weaning weights in November, is one of the main reasons the Gordon families of Percyview Farms in southern Saskatchewan have included Simmental genetics in their beef breeding program for nearly 30 years. At one-time the fourth generation farm, which was actually a dairy operation for many years before transitioning to beef starting in the mid-1960s, used to calve in January and February primarily to achieve higher weaning weights on their then mostly British-cross beef cattle. “But once we introduced Simmental genetics into our program we were eventually able to move the calving season to start about April 15,” says Grant Gordon. “So we’ve been able to calve our herd through April and May and still achieve about a 610 pound weaning average on November calves. Simmental is a good all-round breed in a cross-breeding program, but achieving that weight and efficient rate of gain on pasture is the main reason we have stayed with the breed.” Percyview Farms were recognized by the Saskatchewan Simmental Association as their 2018 Commercial Breeder of the Year for their achievements in producing an efficient, and productive commercial beef herd built around Simmental genetics. The farm is located near Kisbey in south-central Saskatchewan, on the south side of the Moose Mountains, about 90 minutes southeast of Regina. While Percyview Farms has used Simmental for about 27 years in a cross breeding program with mostly Red and Black Angus cattle, Grant Gordon says it wasn’t exactly a love-at-firstsight relationship. He recalls a frustrating first-experience with the exotic breed in the 1960s. The Simmental breed was new to Canada and a bull named Parisien, a red and white spotted Simmental, had made his name as an amazing herd sire, so the Gordons bought a Parisien son to be used as a herd sire. “Well we had more calving problems using that bull then I care to think about,” says Grant. “We got rid of him and I swore I would never have another Simmental on the place.” Years later Grant accompanied a neighbour to a bull sale at Soderglen Ranches in Alberta. Grant was actually looking for a Charolais bull, but he noticed people were showing a lot of interest in a pen of excellent looking crossbred bulls, half Simmental and half Red Angus. Grant bought a Charolais that day, but the next year he returned to Soderglen and bought one of those cross-bred bulls, promoted as being easy-calving bulls. Grant liked the growth and performance results he saw after using the crossbred on their Angus-based cowherd. Trying that halfblood bull in the 1990s eventually led to a three-quarter blood and then to fullblood bulls and they have stayed with Simmental for 27 years.

Today, on their mixed-farming operation they run about 550 head of cows, all Red and Black Simmental/Angus-cross females, bred to red and black Simmental bulls. The beef operation also includes a 400 head backgrounding feedlot which is primarily used for their heifer calves, and depending on the year they also finish anywhere between 70 and 100 head of cull cows. They select some of the top heifers for herd replacements, but also buy about 40 head of purebred Simmental heifers each year to be used as replacements to improve the bloodlines and good disposition of the cowherd. Aside from cattle, they also produce about 10,000 acres of annual crops. There are two generations of the Gordon family running Percyview Farms today. The three brothers of the older generation are Grant and Wanda Gordon, Ron and Wendy Gordon and Larry Gordon. Joining them in the family business is Ron and Wendy’s son Kris, and Grant and Wanda’s son Troy. While Percyview Farms is in the commercial beef production business, it hasn’t completely let go of some elements of raising purebred cattle. Grant’s father at one time raised purebred Hereford and Angus cattle. Percyview Farms today continues a long-established plan of buying purebred bulls from breeders across the country, as well as refreshing part of the cowherd with purebred Simmental heifers each year. “To a large extent we have a purebred herd that we manage for commercial purposes,” says Grant. “We don’t do registrations and other paperwork, but I do keep records for each animal. I know, for example, with each calf born which bull sired that calf.” He says keeping proper records is a valuable tool in overall herd management, helping them produce very marketable calves each fall. The nomination document prepared for the commercial breeder competition point out that the Gordons appreciate the maternal qualities and the added performance that Simmental genetics offer them as commercial breeders. They have also found that the Simmental influenced cattle are more marketable and widely accepted by feeders than other breeds they have utilized in the past. They market their steers every fall usually through T.E.A.M (electronic auction) and background their heifers. All cattle are age verified, and the farm is also part of the BIXS program. They utilize the data supplied for all the cattle they market through to slaughter. They have collected years of carcass data and are very pleased with the grading and finishing results.

The heifers are all bred to Black Angus bulls and after that they are bred to Simmental bulls. They are careful to ensure that they are keeping hybrid vigour within their herd. They are strict on udders, feet and disposition and cull accordingly, every year they cull cows to maintain their numbers and bring in the replacements. The Gordons are proud of the performance achieved while maintaining quite a young cowherd. Prior to BSE, the farm was part of a replacement heifer sale, “Top Cut” and they topped the sale every year with their Simmental influenced heifers. They now sell about 20 bred heifers privately each year. “We have always believed that herd bulls are an investment and have never bought cheap bulls,” says Grant. They also run breeding fields with two to three bulls that are sired by the same bull to bring consistency to their calf crops. While their breeding program is geared toward performance, Grant says it is a herd they don’t have to babysit either. “The herd begins calving in mid-April and it is fairly close to the yard, then as we get into May they start moving out onto grass,” says Grant. “We check the cows during calving during the day, but come evening they are on their own until the next morning. We have developed a herd with very little calving difficulty.” As the cowherd completes calving they move to summer pasture. The farm has about 320 acres of developed pasture, but for most of the summer and early fall the herd grazes on “the really good native hard grass” that’s found in the Moose Mountain area, says Grant. As pasture conditions decline and winter approaches in late October and early November, Grant will provide feed for calves about two weeks before actual weaning and sale day. After weaning the cows are fed barley silage and hay, while in the backgrounding lot heifers are fed a ration that includes barley silage, protein pellets and alfalfa hay. The herd is on a silage and hay ration right up until about the middle of May when calves are processed and the herd heads out to pasture. After what might be described as a rocky start with the breed, “It is a testament to excellent breed development work the Simmental breed has done over the years,” says Grant. “These are very functional and productive cattle for commercial beef producers.”

Simmental –You Can’t Afford Not To

appy New Year and welcome to the first issue of Commercial Country for 2019. 2018 was again an interesting year for Canadian agriculture with many of us needing to again show flexibility because of weather variability through the growing and harvest seasons. Those of us who have been in the industry for several decades have seen many of these challenges before although that doesn’t make them any easier to conquer when they are now combined with a rapid pace of change along with challenges of consumer knowledge about food production. Like the Simmental breed in Canada adaptability is crucial as agriculture continues to change and evolve. For those of you who may be new to the cattle business or to using Simmental genetics, it might come as a surprise that Simmental was not always as popular or as well received in the commercial beef cattle sector as they are today. There in fact was a time when Simmental influenced cattle were hard to sell and were often sold at a discount to other breeds. That has most certainly changed as Simmental breeders have adapted their breeding programs to better suit market demands. While many commercial cattle producers did just fine marketing their calves in the fall of 2018, some simply just sold them and experienced a reduction in the prices that they received for their calves in 2017. Top quality Simmental calves throughout the fall of 2018 still brought premiums when compared to other breeds and in some areas were bringing ten cents or more per pound more over straight British bred calves of the same weight. A “money stripe” or a blaze face on a calf brought an even larger premium as it clearly indicated Simmental influence. Given the drought and tightened feed supply, 2018 calf prices still exceeded many people’s early expectations. There were some producers who were disappointed in the late October and November sales when the number of calves going through the markets increased, however quality Simmental influenced calves brought home more dollars per head. The extra pounds on the Simm-cross calves increased the take home pay in all cases. Buyers were looking for Simmental calves and were paying a premium for them because they

know that today’s top quality Simmental influenced cattle feed very well and provide the yield and carcass size while grading to fit today’s market demands. Nowhere was the Simmental presence noticed more than at one of the highlight events last fall, the Canadian Western Agribition Commercial Cattle Show and Sale. Simmental genetics were found in almost every single pen in the barn and the majority of show winners and high sellers were Simmental influenced. While bred commercial female prices were somewhat lower this fall, premiums were paid on the top end Simmental influenced females as producers improved the quality of their herds. It was also great to see Simmental-cross heifers for sale that were bred to easy calving Simmental bulls. Yes that’s right, producers are now breeding their heifers to Simmental and Simmental-cross bulls! The maternal influence of the Simmental cow is well known and is in demand and brings a premium. It is also evident that there are many reasons for British based cowherds to use today’s Simmental bulls and retain the crossbred heifers as replacements. The weight gain that will be realized on the steer calves makes for a double win. While some traditionalists may worry about qualifying for branded beef programs such as Certified Angus Beef (CAB), they can rest easy as the black hided ones will still qualify out of black Simmental and non-diluter red and traditional Simmental bulls. There is a reason that SimmAngus has become an industry buzz-word. As we have witnessed in every part of the country, quality is still rewarded in all aspects of beef production and it has never been more important to have more pounds of calf to sell than it is now. The most cost effective way to gain more pounds is through heterosis and no other breed provides more opportunity to increase profitability for today’s beef producers than Simmental. Carcass Merit By: Sean McGrath, Breed Improvement Co-oridinator for the Canadian Simmental Association

C

arcass is often something that we don’t pay enough attention to in breeding beef cattle. In the day to day operations of a seedstock or cow/calf operation carcass traits can seem like they are a long way away from ground zero. As we approach the turn of the year, for many last year’s calves are down the road and we are beginning to think about ensuring live calves can hit the ground running over the next few months. For most bulls that are sold, the primary client is solely in the cow/calf business and so characteristics like calving ease and growth are high priority. That is more than fair, however it is also important to appreciate the folks that are taking the cattle onto the next step and ultimately the end consumer of a hopefully high quality product. With that in mind, I thought it would be useful to reintroduce the CSA carcass evaluation and various tools available to breeders to add carcass testing to their programs. The BOLT evaluation examines carcass using several tools. This includes pedigree ties, ultrasound data on individuals and offspring, carcass information on progeny and of course DNA marker information. From this, carcass EPD are produced for Carcass Weight (CW), Rib-Eye Area (REA), Fat Thickness (Fat) and Marbling (Marb). Carcass weight is a measure of differences in hot carcass weight in pounds when sires are mated to the same cowherd. Most fed cattle that are sold on the grid are paid based on a combination of carcass weight, yield and marbling. Generally heavier carcasses are preferred for many markets as they generate more gross revenue until they hit a size where they are penalized. Yield is produced by a combination of larger Rib-Eye Area and lower Fat Thickness. Fat Thickness has a greater effect on yield than REA but generally speaking you are looking for more rib-eye and less fat. Marbling is what we use as a proxy for meat quality. Greater levels of marbling are associated with juiciness, flavour and tenderness of the meat. For most fed cattle the highest price point is for cattle with lots of marbling, with a high lean meat yield (Big REA, Low Fat) and a carcass weight that fits within the limitations of the marketing grid. This difference in endpoint value is often why you will see cattle of roughly the same weight and quality sell for vastly different prices or why you will see certain types of cattle loaded on trucks to be fed and sold into specific regional markets. From a seedstock perspective there are a lot of things we can do to assess carcass merit, but the easiest is to ultrasound yearling seedstock. An ultrasound record is not exactly the same

as a carcass record, but it is very close and you can still breed the animal after doing an ultrasound. Ultrasound measurements should be taken on groups of animals between 300 and 440 days of age. The technician will clip an X on the calf’s ribs and measure rib-eye area, fat thickness and intramuscular fat (marbling), and a swipe on the rear quarters to measure rump fat. This data will then be included in the Bolt evaluation and contribute to carcass EPD on your herd. Additionally, some members may harvest their non-select animals or have feeder cattle with known parentage that they can use to collect actual carcass data that can also be included. Currently a lot of members are participating in DNA testing and these higher density tests also contribute to carcass EPD, however they do require some carcass and ultrasound data moving ahead to “anchor” the markers to carcass traits. It shows in the data that the temptation to test sale bulls is quite high, whether ultrasound or DNA, but it is also worth thinking about scanning and DNA testing replacement heifers. By scanning/testing heifers you provide a progeny record for the dams and sires used in your herd, as well as establishing a record on your incoming cows. Heifers also express some of the carcass traits such as marbling more readily than bulls do. The same applies to DNA testing and doing first calf heifers is a good way to establish a base of information in the cow herd. I often hear the comment that the more you test for the more chance that a bull will “fall out” of the desirable or saleable category. It is important to realize that there is no perfect beef animal, however knowledge of carcass traits can help to balance the use of genetics in a program with goals. Additionally, having carcass information available can attract new buyers to a program. While we are sometimes a long way removed from the plate of our consumer, testing our seedstock for carcass merit is a good way to ensure that we continue to attract new dollars into our industry and are successful over time. E

very year at calving season veterinarians often help deliver or have discussions about abnormal calves that are born. Sometimes because they are twisted up or have abnormally large heads or extra limbs they can present as a calving problem. In these cases we often have a non viable calf. Other times producers question us about these calves and other times the purebred producers may be questioned because the sire was one of their purchased bulls. This article will shed some light on how to classify these and the probable causes. Suffice it to say very very rarely are these ever a hereditary defect. If a very abnormal calf is born this spring take a few pictures of the abnormality for your records. We want to determine what system is involved such as the skeletal (spine versus the rest of the skeleton) eyes, mouth such as a cleft palate, integumentary system such as no hair or an umbilical hernia, or the internal organs are twisted missing etc. There are the fetal monsters such as the cyclopean, two headed calf, Siamese twins or the very consistent defect of the schistosomas reflexus calf (calf born essentially inside out). Some of these calves are so abnormal a fetotomy needs to be performed and them cut up inside the cow or the worst case scenario a caesarean section to deliver them. All this for a non viable calf. Other times calves are born quite viable but with slight abnormalities such as a small deformed extra limb, or a small cleft palate or an inguinal hernia to name but a few. Some of these minor abnormalities can be surgically repaired and go on to be a somewhat normal calf. Others are born with severely contracted tendons and are treated based on severity. They may be left or the toe rasped to pain killers given and the leg forcefully extended to splints applied. In severe cases flexor tendons may be cut to allow a somewhat normal extension of the limb. Congenital defect means born with it and the severe ones are probably chromosome aberrations and often will come with multiple problems. This means a total individual calf problem not related to the genetics of the bull or cow in any way. A genetic fluke really and will not be repeatable in that cow in future breedings. Most times, unless another calf available to orphan on, the cows are culled out because of not raising a calf that year. It is not uncommon for large herds to have one such case every few years. There may be, as I say, chromosome abnormalities, to trauma during pregnancy to an issue with the uterine environment. There are some abnormalities that causes have been found and one is atresia ani or a lack of rectum. These calves are seen almost immediately as appear constipated as they are attempting to push out the meconium. A close look

reveals they don’t have a rectum. Rectal palpation at 35 days gestation has attributed to a slight increase in these in the dairy world. We have done heroic colostomies on some of these and got them to slaughter weight indicating there is absolutely nothing else wrong with the calf. Sometimes large parts of the intestinal tract is missing and these calves are put down but again no hereditary predisposition. It is good to document any of these abnormalities in the herd. In the rare event it might be hereditary you would see multiple calves with the same disorder. Then there might need to be DNA testing done to see if there is a common link. Over the years each of the purebred breeds have had one or two of these issues come up and have found the common link and eliminated it from the gene pool. Keep in mind most of these are recessive genes so must be carried by both the sire and dam before we see anything in the calves and then only in one quarter of the calves. They may initially start with a mutated gene. I looked it up and there have been, over all the years up to 200 genetic defects linked to cattle. Some very minor and some major resulting in a non viable calf. Again it must be noted they are repeatable and all the purebred breeds of cattle have certain ones linked to them. Conditions such as betamannisidosis, the TL 1/29 gene dwarfism, arthrogoposis but they get eliminated by selection culling and identifying the carriers. They are very rare though and the very high proportion of oddball calves you rarely see on your place are simply congenital defects. Document these calves and if you do see two or more talk with your veterinarian. An autopsy could be done on the systems affected identified and then often things like feed and mycotoxins, nutrition and mineral status are probably going to be looked at first before hereditary involvement is suspected. With mycotoxins and nutrition a large percentage of calves may be affected and often it could become finding the solution to prevent the condition next year. So this calving season document any abnormal calves with pictures and if more than one get them checked out by your veterinarian to determine if it is just congenital and not worth pursuing or may have a cause that is preventable. Keep in mind the cause may have happened way back in gestation so it may almost be impossible to alter fetuses affected already in utero. Have a great 2019 calving season with lively, vigorous calves that get up quickly and suckle that colostrum they desperately need. This topic may not have been glamorous but is worth discussing.

L’année 2018 fut une année intéressante pour l’agriculture canadienne, alors que plusieurs d’entre nous ont dû faire preuve de flexibilité en raison des conditions météorologiques changeantes durant la saison de croissance et des récoltes. Ceux d’entre nous impliqués dans l’industrie bovine depuis plusieurs décades ont déjà connu des défis similaires, toutefois cela ne les rend pas moins difficile à affronter, alors qu’on fait face à des changements de plus en plus rapides et des consommateurs plus sensibles par rapport à la production des aliments. Il est crucial que la race Simmental préserve son adaptabilité au contexte canadien, tandis que l’agriculture continue de changer et d’évoluer. Pour les nouveaux éleveurs de bovins et ceux qui n’utilisaient pas la génétique Simmental, vous pouvez être surpris de constater que la race Simmental n’a pas toujours été aussi populaire, ni autant appréciée qu’elle ne l’est de nos jours par les producteurs commerciaux. En fait, à une époque, les bovins croisés Simmental étaient difficiles à vendre et ils se vendaient même à des prix plus bas que les autres races. Le contexte a certainement changé, alors que les éleveurs Simmental ont adapté leur programme d’élevage afin de mieux répondre à la demande du marché. Bien que plusieurs producteurs commerciaux aient très bien fait avec la vente de leurs veaux durant l’automne 2018, certains ont simplement vendus leurs veaux et ils ont même reçu moins d’argent que ce qu’ils avaient reçu pour leurs veaux en 2017. Tout au long de l’automne 2018, les veaux croisés Simmental d’excellente qualité ont obtenu une prime à la vente comparativement aux autres races. À certains endroits, ils ont été vendus pour dix cents de plus la livre que les veaux de type britannique de même catégorie de poids. Un veau avec une bande blanche dans la face ou avec une face marbrée aura obtenu encore plus d’argent, car il est à coup sûr d’influence Simmental. Malgré la sécheresse et une disponibilité réduite de fourrages, les prix des veaux en 2018 ont dépassé les attentes que plusieurs avaient au début de la période des ventes. Certains producteurs ont été désappointés vers la fin d’octobre et en novembre, alors qu’il y avait beaucoup plus de veaux dans les ventes, par contre les veaux croisés Simmental ont continué de rapporter davantage d’argent par tête. Dans tous les cas, les livres de plus des veaux croisés Simmental ont permis aux producteurs de rapporter une meilleure paie à la maison. Les acheteurs recherchaient les veaux Simmental et ils payaient une prime pour ces veaux, car ils savaient qu’en ce moment les veaux croisés Simmental de grande qualité s’engraissent bien, et qu’ils produisent un rendement et un poids de carcasse rencontrant les exigences du marché actuel.

La race Simmental a fait sentir sa présence comme nulle part ailleurs l’automne passé, lors de l’évènement culminant de l’année, soit le concours et la vente des bovins commerciaux lors de l’exposition Agribition de Régina. On pouvait remarquer que la génétique Simmental était présente dans presque tous les enclos dans l’étable, et la majorité des gagnants au concours et des sujets vendus les plus chers était d’influence Simmental. Bien que les prix des femelles commerciales gestantes étaient quelque peu inférieurs à l’automne passé, les femelles croisées Simmental de grande qualité ont obtenu de très bons prix, permettant aux producteurs d’améliorer la qualité de leur troupeau. Il était aussi intéressant de constater que des taures croisées Simmental offertes en vente étaient saillies par des taureaux Simmental faciles au vêlage. Eh oui, c’est bien vrai, les producteurs font maintenant saillir leurs taures par des taureaux Simmental et croisés Simmental! Les qualités maternelles de la vache Simmental sont bien connues, on les recherche et on paie une prime pour les avoir. Il est tout aussi évident qu’il y a de nombreuses raisons de nos jours justifiant que les producteurs possédant un troupeau d’influence de races britanniques utilisent des taureaux Simmental, et qu’ils gardent les génisses croisées pour leur remplacement. En fait, ils gagneront en double, avec le gain de poids additionnel des veaux mâles produits. Bien que certains individus plutôt traditionnalistes s’inquiètent par rapport aux opportunités de rencontrer les exigences de programmes de certification tels que le Certified Angus Beef (CAB), ils peuvent se rassurer car les bovins de couleur noire pourront tout de même se qualifier, s’ils sont issus de taureaux Simmental noirs, ou de couleur rouge sans le gène de dilution, ou de couleur Simmental traditionnelle. Voici pourquoi les bovins SimmAngus sont si en demande dans l’industrie. Tout comme on a pu le constater partout au pays, la qualité est toujours récompensée en production bovine, de sorte qu’il est encore plus important qu’il ne l’ait jamais été d’avoir davantage de livres de veau à vendre qu’il ne l’est en ce moment. Le meilleur moyen et le plus efficace pour obtenir plus de livres de gain demeure par les bénéfices associés à la vigueur hybride et, à ce chapitre, aucune autre race ne vous offre autant d’opportunité d’augmenter la rentabilité des producteurs bovins que la race Simmental. D

ans l’élevage bovin, on n’accorde souvent pas beaucoup d’importance aux qualités de carcasse.Parmi toutes les opérations quotidiennes sur une entreprise vache-veau de race pure ou commerciale, les caractères liés aux qualités de carcasse semblent bien loin des réalités de tous les jours. Tandis qu’on est près de la fin de l’année, les veaux de l’an passé sont pour plusieurs partis et on commence déjà à penser aux prochains veaux qui devraient naître vivants et en forme au cours des prochains mois. Par rapport à tous les taureaux qui sont vendus, le client principal demeure le producteur vache-veau commercial, de telle sorte qu’on accorde beaucoup d’importanceaux caractères tels que la facilité de vêlage et la croissance. Cela est très bien ainsi, toutefois il faut garder à l’esprit le travail fait par les intervenants qui vont développer les bovins lors des prochaines phases, et ultimement produire une viande de bœuf de qualité dans l’assiette du consommateur. Cela étant dit, je crois qu’il serait valable de réintroduire auprès des éleveurs de race l’évaluation sur les carcasses faites par l’ASC, ainsi que les divers outils disponibles s’ils veulent ajouter le testage des carcasses à leur programme. Avec la nouvelle évaluation BOLT, les carcasses sont évaluées à partir de plusieurs outils. Ceux-ci incluent les liens généalogiques, les données de mesures par ultrasons chez les animaux et leurs descendants, les informations sur les carcasses des progénitures de sujets de race pure et, bien entendu, les informations issues des analyses sur les marqueurs d’ADN. Avec toutes ces données, des ÉPD sont calculés pour le poids de la carcasse (CW), la surface de l’œil-de-longe (REA), l’épaisseur de gras dorsal (FAT) et le persillage (MARB). Le poids de la carcasse représente une mesure des différences du poids chaud de la carcasse en livres, alors que les taureaux auraient été employés chez le même cheptel de vaches. La plupart des bouvillons vendus selon une grille de classement sont payés sur la base d’une combinaison du poids de la carcasse, du rendement et du persillage. En général, les carcasses plus lourdes sont demandées par plusieurs marchés, car elles permettent de dégager un meilleur revenu brut, mais elles seront sujettes à des pénalités lorsqu’elles dépassent un certain poids. Le rendement est le résultat d’un effet combiné apporté par une plus grande surface de l’œil-de-longe et une épaisseur de gras dorsal plus faible. L’épaisseur de gras dorsal aura un effet supérieur au rendement de carcasse que la surface de l’oeil-de-longe, mais de façon générale on cherchera à avoir davantage d’œil-de-longe et moins de gras. On utilise le persillage à titre d’estimé de la qualité de la viande. Des valeurs plus élevées de persillage sont associées avec une meilleure jutosité, flaveur et tendreté de la viande. Pour la majorité des bouvillons produits, on obtiendra le meilleur prix global pour des bovins possédant beaucoup de persillage, et ayant un haut rendement de viande maigre (grande surface d’oeil-de-longe, faible niveau de gras), ainsi qu’un poids de carcasse qui se situe à l’intérieur des limites de la grille de classement. La différence observée au niveau de la valeur finale d’une carcasse est souvent occasionnée lorsque vous avez des bovins ayant sensiblement le même poids et la même qualité qui sont vendus pour des prix très différents, ou encore cela peut expliquer pourquoi certains types de bovins seront transportés pour être engraissés, tandis que d’autres seront destinés à des marchés de niche.

Du point de vue d’un éleveur de race pure, il y a plusieurs manières d’évaluer les qualités de carcasse, mais la plus simple demeure la prise de mesures par ultrasons chez les sujets de race pure d’un an. Un rapport de mesures par ultrasons n’est pas vraiment pareil à un rapport de classement de carcasse, il s’y rapproche toutefois pas mal et vous pouvez toujours soumettre le sujet analysé à la reproduction après que les mesures aient été prises. Les mesures par ultrasons doivent être effectuées chez des groupes de sujets âgés entre 300 et 440 jours. Le technicien rasera une section de poils sur la région des côtes de l’animal, où il mesurera la surface d’oeil-de-longe, l’épaisseur de gras dorsal et le gras intramusculaire (persillage). Il rasera une autre section sur le quartier arrière, afin de mesurer le gras sur la croupe. Ces données seront incluses dans l’évaluation BOLT et elles viendront contribuer aux ÉPD de carcasses pour votre troupeau. En plus, certains membres peuvent faire abattre les sujets non retenus pour l’élevage, ou bien d’autres bovins d’engraissement dont ils connaissent le pourcentage, afin que toutes ces données puissent aussi être incluses aux évaluations sur les carcasses. En ce moment, plusieurs membres participent au testage par l’analyse de l’ADN, et ces résultats de tests è haute densité viennent aussi contribuer au calcul des ÉPD.Par contre, ils devront également obtenir des mesures par ultrasons et des données sur les carcasses, afin que les marqueurs soient bien « ancrés » aux caractères sur les carcasses. Lorsqu’on regarde les données, il est clair que les éleveurs ont tendance à faire tester leurs taureaux offerts en vente, soit par l’analyse de l’ADN ou par les ultrasons, toutefois il serait important qu’ils pensent aussi à faire mesurer et analyser leurs génisses de remplacement. En faisant ainsi mesurer/analyser vos génisses, cela produit des résultats sur la descendance des vaches et des taureaux de votre troupeau, tout en fournissant des données sur vos futures vaches. Les génisses expriment d’ailleurs plus rapidement que les taureaux certains des caractères mesurés, notamment le persillage. On peut appliquer la même règle à l’analyse de l’ADN et, en faisant tester vos femelles de premier veau, vous contribuez à établir une base d’informations dans votre troupeau. J’entends souvent le commentaire à l’effet que plus vous faites de testage et plus il y aura de chances que le taureau « tombera » endehors des catégories désirables ou vendables. Il est important de bien réaliser qu’il n’y a pas de bovin parfait, par contre en ayant une meilleure connaissance des qualités de carcasse, cela nous aidera à mieux équilibrer notre emphase de sélection génétique en fonction de nos objectifs. De plus, le fait d’avoir des informations disponibles sur les carcasses peut attirer l’attention de nouveaux acheteurs pour votre programme. Bien que nous soyons souvent bien loin de l’assiette des consommateurs, l’analyses des carcasses chez nos sujets de race pure est une bonne façon de nous assurer que de nouveaux dollars seront continuellement ajoutés dans notre industrie et que nous aurons du succès à long terme. Congratulations to Percyview Farms 2018 SSA Commercial Breeder of the Year!

Percyview Farms is a fourth-generation operation located north of Kisbey, Sk on the sunny side of the Moose Mountains. The operation is owned and operated by the Gordon family; Grant, Larry, Ron, Troy & Kris. They run 550 red and black Simmental influence cows and grain farm 10,000 acres of cash crops. Cattle have always been part of the family operation; they operated a dairy and Grant, Larry & Ron’s father started in the purebred Angus business in 1965. 27 years ago, they were introduced to crossbred Simmental bulls and gave them a try. The cow herd base at the time was primarily Charolais and Angus and they wanted to achieve the F1 cross to produce a cowherd based on optimal heterosis. This is when they established a real appreciation for the breed and moved from the ½ bloods to purebred Simmental bulls and have been using them ever since. The biggest benefit for their operation has been being able to back off their calving period from February/ March to April/May and still wean off calves that weigh the same at weaning time. They appreciate the maternal qualities and the added performance that the Simmental genetics offer them as commercial breeders. They have also found that the Simmental influence cattle are more marketable and more widely accepted by feeders than other breeds they have utilized in the past. They market their steers every fall usually through T.E.A.M and background their heifers. They keep about 85 replacements each year and purchase 35-40 Simmental females annually as well. They are apart of the BIXS program and utilize the data supplied for all the cattle that they market through to slaughter. They have collected years of carcass data and are very pleased with the grading and finishing results. The heifers are all bred to Black 2018 SSA Commercial Breeder of the Year Angus bulls and after that they are bred to Simmental bulls. They are careful to ensure Larry, Grant, Troy and Kris Gordon accepting their Farm Sign from SSA President, Kirsten Fornwald that they are keeping hybrid vigour within their herd. They are strict on udders, feet and disposition and cull accordingly. Every year they cull cows to maintain their numbers and bring in the replacements. Due to this their cowherd is always young and one that they are very proud of! Prior to BSE, the Gordon’s were a part of a replacement heifer sale, “Top Cut” and they topped the sale every year with their Simmental Influence heifers. They now sell about 20 bred heifers privately annually. They have always believed that herd bulls are an investment and have never bought cheap bulls. They also run breeding fields with 2-3 bulls that are sired by the same bull to bring consistency to their calf crops. The Percyview Farms operation is one that is nationally recognized and has bought cattle out of purebred operations from British Columbia to Nova Scotia. They are strong supporters of the Simmental breed and very deserving recipients of this award.
